AI-Assisted prediction and control of microbiological risks in prepared meals

The project “AI-ASSISTED PREDICTION AND CONTROL OF MICROBIOLOGICAL RISKS IN READY-TO-EAT MEALS (FOODMICROBIA)” is a recipient of funding under the NEXOS program, which aims to promote cooperation between SMEs and other actors in the regional innovation system, through support for market-oriented collaborative research, development, and innovation projects aligned with the challenges and priorities identified in the RIS3 Galicia 2021-2027.

FOODMICROBIA’s objective is the application of predictive microbiology as a tool to ensure food safety and quality in a cost-effective and rapid manner, which will be achieved through five specific objectives aligned with the project’s activities:

  1. Application of AI tools in food processing plants for continuous monitoring and detection of signs of microbiological contamination.
  2. Application of AI tools for quality control and the optimization of storage temperatures to reduce food waste.
  3. Software packaging of the tool for AI-based food safety control throughout the entire processing chain.
  4. Development of new sanitation protocols for high-risk environments detected by AI.
  5. Industrial piloting of AI models for risk control and prediction.

The nature of the entities comprising the consortium ensures that the research addresses the sector’s real needs, so that its results and benefits accrue to both society and the productive sector. In this context, the project will contribute to the creation of a collaboration model based on knowledge transfer and technological complementarity, in which each partner will contribute its expertise to jointly address food safety challenges: COESCO DEZA, S.L.U., DIMENSIONA CONSULTORÍA TECNOLÓGICA, S.L., GRADHOC SMART, S.L. AND PROQUIDEZA, S.L.

In addition, the consortium benefits from strategic partnerships with the Galician Institute of Food Technology (AINIA), the Galician Agri-Food Cluster (CLUSAGA), and IMASDE AGROALIMENTARIA.

The FOODMICROBIA project is funded through the NEXOS (2025) call for proposals, subsidized by the Galician Innovation Agency (GAIN) of the Regional Government of Galicia and co-financed by the European Union under the Galicia ERDF 2021–2027 program.
